My wedding cakes have travelled the world, though most of my output is consumed at weddings in London. Here I will give a brief insight into how I work.
The first questions my wedding cake clients are asked by me? how many guests, when and where is the
wedding, and what is the desired cake mix. Pricing is of course a concern for my clients, and generally this information is enough to allow me to give a guide, although until we establish how many flowers are required on the wedding cake and what decorative design is needed then it is only that; a guide. From here, we usually progress to discussing the cake mixture, and I have given a brief outline below of the most commonly asked questions I am asked regarding suitability of mixes.
The quantity of wedding cake may vary depending on your reception meal/buffet; is the cake to be taken as a dessert course or with coffee after the dessert? Some clients want to send cake to absent friends; this is only possible for fruit cake, as other mixes dry out. Remember fruit cake cuts approximately into double the number of slices compared to sponges such as chocolate, lemon or plain sponge. These factors combine to indicate the size of cake required, and should be considered before settling on a design. Difficulties arise when a different arrangement of stacking is required. Generally speaking, only fruit cake is sufficiently strong to allow stacking. Some clients find wedding cakes they like on my site, or elsewhere, but require variations such as colour, flowers or maybe a different stand. These are possible.
Wedding cakes: Real Flowers or Sugar flowers?
Placing real flowers on cakes is something I am often asked about. I was taught that introducing unknowns into my baking was bad practise; it follows that I am not in control of pesticides used on flowers, nor can I be sure the pests haven't survived those very same chemicals, so I do not go along with this practise. Sorry! The beauty of creating sugar flowers is the control I have over colour, and you can be sure that
they will not have wilted, even after several
years!
When something totally individual is wanted, I usually work around the colour scheme of wedding and reception venue. Decor of the venue is often inspirational as
much as the dress material, personal interests and flower choice. The more information we have to work on, the more unique the cakes are. Taking time over these things may seem minor, but most of the wedding cakes you will see in my site are, I think you will agree, individual statements.
